Maple-Crafted Berry Gallette

Ingredients

  • 1 sheet puff pastry, pre-rolled or homemade
  • 3 cups mixed berries (strawberries sliced)
  • 5 tbsp Elderberry Maple Syrup
  • 1 tbsp sugar (maple sugar preferred)
  • 2 tbsp cornstarch mixed with 1 tbsp water
  • 1/4 tsp lemon or orange zest
  • 1/2 tsp vanilla extract
  • 1 tbsp milk mixed with 1 tbsp Maple Craft Syrup (for brushing)
  • 2 tbsp flour, 1/2 tsp salt, 1/2 tsp pepper (for dusting)

Directions

  1. Preheat oven to 375°F.
  2. Shape the puff pastry into a rough circle or oval.
  3. Line a baking sheet with parchment paper and lay the pastry on top.
  4. Sprinkle the flour mixture over the pastry.
  5. Cook 2 cups of the berries with the syrup, sugar, zest, and vanilla for 5-7 minutes over low-medium heat, without burning.
  6. Stir in the cornstarch mixture and cook for another 5 minutes. Let cool and thicken.
  7. Toss the remaining fruit into the pot and stir gently.
  8. Pour the fruit mixture onto the center of the pastry, leaving about 2 inches of plain pastry around the edges.
  9. Fold the edges over the fruit.
  10. Brush the top of the pastry with the maple milk mixture.
  11. Bake for 40-45 minutes, or until golden brown.
  12. Serve warm, at room temperature, or chilled.
