Maple-Crafted Berry Gallette


Ingredients:
  • One pre-rolled or homemade sheet of puff pastry - we like Schar Gluten Free Puff Pastry
  • 3 cups of berries (strawberries should be sliced)
  • 5 tbsp Maple Craft Syrup - Bourbon Barrel Aged, Peach Bourbon, Honey-Infused, Elderberry or Salted Caramel all work well!
  • 1 tbspn sugar (maple sugar preferred)
  • 2 tbsp corn starch mixed with 1 tbsp water
  • 1/4 tsp lemon or orange zest
  • 1/2 tsp vanilla extract
  • Maple milk (mix 1 tbsp milk (dairy or plant) w/1tbsp Maple Craft Syrup
  • Flour mixture (2 tbsp flour, 1/2 tsp salt, 1/2 tsp pepper)

Instructions:

  • Preheat oven to 375
  • Shape puff pastry into rough circle/oval
  • Line baking sheet with parchment paper and lay pastry on top of it
  • Sprinkle flour mixture over pastry
  • Cook 2 cups of berries with syrup, sugar, zest and vanilla for 5-7 mins over low/med heat. Do not burn.
  • Stir in cornstarch mixture and cook for another 5 mins. Let cool and thicken
  • Toss remaining fruit into pot and stir gently
  • Pour fruit mixture onto center of pastry and spread it out leaving about 2 inches of plain pastry around edges
  • Fold edges over the fruit
  • Brush top of pastry with maple milk.
  • Bake for 40-45 mins or until golden brown
  • Serve warm, at room temp, or chilled.
